I've disliked beets for most of my life, but after having them at one of my favorite restaurants and seeing these Cannelle et Vanille photos, I decided I'd give them another chance. Suddenly, I have a new favorite lunch: mixed greens, pistachios, onions, a splash of french vinaigrette, and roasted beets (slice one fresh beet, brush on about a teaspoon of olive oil, and roast at 450° for 20-30 mins).
